Choose potatoes

Processing potatoes
Peel the potatoes and wash them. Prepare a basin of water mixed with white vinegar. Put the peeled potatoes in there. Then take each potato out and cut it into bite-sized pieces. After cutting the potatoes, put them in a basin of water to soak immediately to avoid darkening the potatoes. Repeat until all the potatoes have been prepared.
Soak the potatoes in vinegar water for about 10 minutes, then wash the potatoes again to remove the starch layer on the outside of the cut surface. By doing this, the potatoes will not fall apart when frying.
Blanch the potatoes

Fry potatoes
